Oyster Sake Shooter

1 freshly shucked Fanny Bay oyster
Yolk of 1 quail egg.
1 teaspoon tobiko (flying fish roe)
1/2 teaspoon ponzu (citrus-soy blend)
pinch of minced green onion
Onikoroshi ("Devil Killer") daiginjo sake

Combine ingredients in a martini glass. Slowly pour in chilled “Devil Killer” sake over ingredients.


Ginger Sake Martini

3 parts Sho Chiku Bai sake
splash of triple sec
Splash of pickled ginger juice

Shake with ice and strain into martini glasses containing paper-thin slices of pickled blond ginger.


Blushing Geisha

1 ounce orange juice
1 ounce cranberry juice
Juice of 1/2 lime
pinch of fresh mint
2 1/2 ounces Damrak gin or citrus vodka
1 1/2 ounces Hakusan Raspberry sake

Fill a tall collins glass with ice, add ingredients and stir.


Spliff

Fu Manchu

1.5 oz. Jamaican rum (light or white)
.5 oz. Triple Sec
.5 oz. Green Creme De Menthe
.5 oz. lime juice
shaken & served on the rocks.

Torani creme de menthe syrup can also be used. There are some recipe variations.
The concoction should be a toxic green like the eyes of the arch-villain created by author Sax Rohmer.

Surfer Martini

4 Parts Vodka
2 Parts Malibu Coconut Rum
1 Part Banana Liqueur

Add all ingredients into a martini shaker filled with ice. Shake and strain into 2 well chilled martini glasses. Garnish with a pineapple spear.


Rum and Coke

2 ounces rum
4 ounces cola

Tango

1/2 ounce rum
1/2 ounce sweet vermouth
1/2 ounce dry vermouth
1/2 ounce Benedictine
1/2 ounce orange juice

Shake with ice. Strain into cocktail glass Garnish with an orange twist.


Presidente

1 1/2 ounces light rum
1/2 ounce dry vermouth
1/2 ounce Cointreau
1/2 ounce lemon juice
1 dash grenadine.

Shake with ice. Strain into a cocktail glass. Garnish with a orange twist.


Planters Punch

1 1/2 ounces white rum
3/4 ounce lemon juice
Dash orange juice.

Shake with ice. Strain into a cocktail glass. Garnish with a squeeze of lemon.


Old Cuban

3/4 ounce fresh lime juice
1 ounce simple syrup
1 1/2 ounce rum (Bacardi 8 Anejo)
2 dashes Angostura bitters
6 mint leaves
2 ounces champagne (Veuve Clicquot)

Muddle lime juice, syrup, mint in a mixing glass. Add rum, bitters, ice, and shake well. Strain into cocktail glass, and top with champagne. Garnish with sugar-coated vanilla bean. Created by: Audrey Saunders (2002)


Mojito

 

2 ounces light rum
1 ounce lime juice
2 teaspoons sugar
Mint
Soda Water

Place sugar, a large pinch (small handful) of mint, and a splash of soda water in a pint glass. Use a muddler to lightly press mint and dissolve sugar until it smells of spearmint gum. Squeeze both halves of lime into the glass, leaving one hull in the mixture. Add rum, stir, and fill with ice. Top with soda water, garnish with mint sprig and serve.


Mai Tai

1 ounce light rum
1 ounce gold rum
1/2 ounce orange curacao
1/2 ounce Orgeat (Almond Syrup)
1/2 ounce fresh lime juice
1 ounce dark rum

Shake all but the dark rum with ice. Strain into old fashioned glass. Top with the dark rum. Garnish with a maraschino cherry. (Invented in 1944 by Victor “Trader Vic” Bergeron.)


Gin Cocktail

2 measures/3 tbsp gin
5 dashes orange bitters

Shake ingredients well with ice and strain into a cocktail glass.
